We have a new website project for this client:

I am wondering the best way to do accomplish this. Should we copy the content from the site onto Jupiter and work to configure it or would it be better to set up Jupiter properly and have my team paste and copy content over. I do not want to move over junk short codes or images we cannot use. 
I am leaning on setting up a new site on my staging server 

Do you think I should use the new jupiter X or the old one?

Setting up a new environment and installing new JupiterX theme would be much better option here as after switching the theme on current install manually removing the current theme page builder shortcode from each page and then setting the layout again would take much more time than setting up the layout on new install and copy the content. You can use default wp-importer tool for importing post automatically.

Without any doubt - new JupiterX. Much more customizable as they have integrated Elementor in this one, fast, more seo friendly, future proof.

Ok. I will buy through themeforrest. We can add it to a new staging server. I would like you to install two demo sites. One for the client we are talking about and one for us to work on for future clients.

Wait, in my themeforrest it looks like I already have Jupiter X? So we do not need to rebuy it to set up the stagging sever correct?

Yes - For the staging server we wouldn't need new copy. But if you want the theme + bundled plugin updates enabled on the live site. We would need a new license or else we would have to update the manually through FTP.

Yes keep those tags that is where the disclaimer goes. I want Jonnamae to add the other content from the main site? Is there a way to move over the content and posts without short codes and stuff. Please provide Jonnamae  the login  direction on how she can duplicate the coolsculpting page to make the other service pages, new gravity forms, confirmation pages, etc. She can use demo grapgics for now
