Hi
are the blog articles nested and organized in the blog section in the backend? When new articles are posted, are they nested and posted in the taxonomy bog? If yes, how come it's not indicated in the URL? Looking at the slugs, they don't have /blog/ on them so I was just wondering how the pages are structured because it affects the page's ability to be found organically.

YES. They are properly set up in the backend.
Yes. With the current set up any new post published will automatically appear on the blog archive page.
They don't have the /blog/ in the URL due to the way we have the permalinks set up on this website.
To my best knoweldge it doesn't matter to Google if you have /blog/ or using any other custom value in URL for the posts because the source of the post code that google crawler reads remains the exact same on either of the URLs. To them it's just the content.
For this client. You are not seeing the posts on the Google because all of them are marked no-index no follow in the yoast settings. Once we update it they should appear in the search results.
Please let me know if you have any questions. Thanks.
